Carrot and Mustard Seed Salad


Here's a quick and easy lemon squeezy recipe that I made last night to go with roasted cauliflower and a cucumber raita and some rice. Possibly a perfect mid week nearly warm night supper.

Simply grate 3 decent sized carrots and mix with the juice of half a lemon and some salt and pepper. Heat a tablespoon of vegetable oil in a small pan and, when hot, fry a tablespoon of mustard seeds till they start to pop. Tip the hot and popping oil over the carrots, stir, check seasoning and enjoy.

Thoroughly delicious.
Sadly not so great cold next day - a touch bitter.

Bron! It was lovely to meet you at FBC on the weekend :) I do love your practical meals because really, most nights it's all about being practical isn't it? I try and throw dinner together in less than 30 mins on weeknights and some of those fancy meals just don't make the cut :)

In some kind of fantasy life dinner would be extraordinary every night but mostly we need fast and fabulous. Guess it makes the fancy efforts that bit more special :)

The salad looks so delicious, I love mustard seeds. My Italian friend made salad almost like that, and I was smitten. Didn't have a recipe though, so I will definitely test this one. I'm so glad I had chance to meet you in London. I'll be back here soon to see what delicious recipes you have posted again!

I love mustard seeds but seriously hate mustard - think it must be the pickling element.
